Vermicelli noodle bowls are one of my go to recipes for a fresh and easy week night meal. Chop chop chop you can whip it up in under 10 minutes
Ingredients:(just for one tonight)
- 1 small packet of vermicelli rice noodles
- Chicken oxo cube
- 2 cups boiling water
- Pinch of chilli flakes
- 1 tbsp lime juice
- 1 carrot
- 1/4 red cabbage
- Small can of tuna
- 1 tbsp Pickled ginger
- Fresh coriander and mint to serve
Place noodles in boiling water with oxo cube, chilli flakes, and lime juice. When soft add to bowl. Julienne carrot and finely slice cabbage. Place carrot and cabbage in bowl with the noodles. Add tuna. Arrange other ingredients and serve.
I told you, so simple! Made in minutes and perfect for a quick week night meal.
